What I Ate – Week 1 – Day 2

Saturday January 12

Breakfast

1/4 c. quick oats, 1 Tbsp. cacoa nibs, 1 tsp. maple syrup, 1 Tbsp. freeze dried Honeycrisp apples, 1 Tbsp. slivered almonds

Lunch

1 baked potato with salsa, 2 Tbsp. Greek yogurt, 2 Tbsp. shredded sharp cheddar, 1/4 c. egg salad, 1/2 c. Greek yogurt with 1 Tbsp. honey and pumpkin pie spice, 1/2 c. frozen cherries

Dinner

Coconut lentil curry – Instead of a cup of white rice, I ate it with 1/2 c. of brown rice.
“Naan” made with Skinny Taste’s easy bagel recipe

Snacks

Broiled grapefruit
Air popped popcorn with Trader Joe’s onion salt
Chocolate chip cookie dough dip with apples and then 1 pretzel rod

What I Ate – Week 1 – Day 1

Friday January 11

Breakfast

Egg Scramble in the microwave – 2 eggs, 1 Tbsp. Parmesan cheese, 1 c. spinach, 1 Tbsp. sun dried tomatoes 
1 Very Cherry Fruit Cup – I drained the liquid and washed it off before consuming the fruit.

Lunch

1/4 cup of egg salad, 1 .5 cups of All You Can Eat Cabbage Soup, 1 Light and Fit Yogurt

Snacks

1/2 bag of Get Trekking Trail Mix from Trader Joe’s on my way to dismissal duty
1 rice cake and 1 edge of garlic cheese

Dinner

1/2 of my Hot Head Burrito lil’ bowl – brown rice, black beans, fajita veggies, pico, corn salsa, cheddar cheese, 1 Tbsp. sweet Haberno sauce
1 serving of Skinny Taste’s French fries in the Air Fryer – Literally a potato cut up with a teaspoon of oil with spices – 1 Tbsp. of siracha ketchup
